The quality of protein foods are measured by there NPU or Net Protein Utilization score. It means the percentage of protein that can be absorbed and used by the body for protein synthesis.

High quality protein is essential for many bodily processes such as building or maintenance muscle, hair growth, nail growth, skin and antibody production. All these processes go on in the body all the time. We cannot choose to stop the other processes just because we want the protein to build muscle, so if you want to build muscle fast then its vital that you supply good sources of high quality protein at each meal throughout the day.

In the protein list above we see eggs have the best NPU score, they are the best high quality protein food of all. However egg yolks contain high cholesterol so they should be limited.
